Vanilla Cupcakes with Buttercream Frosting
Makes 8 cupcakes
Ingredients
For Vanilla Cupcakes
2/3 cup of all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1/4 cup of butter, softened
1/2 cup granulated sugar
1 large egg
1 tsp of vanilla extract
1/4 cup of sour cream
For Buttercream Frosting
1/2 cup of butter
2 cups of powdered sugar (more may be needed)
1 1/2 tsp of vanilla extract
1 tbsp of milk (more may be needed)
3-5 drops of food coloring (optional)
Directions
For Vanilla Cupcakes
1. Set oven to 350 degrees
2. Sift flour, baking powder, and salt into a bowl
3. Cream the butter and sugar in a different bowl *suggested: electric hand or stand up mixer
4. Add egg, vanilla, and sour cream in the bowl; mix
5. Gradually add dry ingredients to wet ingredients
6. Mix
7. Fill cupcake tin with liners
8. Fill each liner 3/4 way up with the batter
9. Bake for 15-18 mins
For Buttercream Frosting
1. Cream the butter *suggested: electric hand or stand up mixer
2. Gradually add powdered sugar
3. Add milk and vanilla
*If the frosting is a liquid consistency, add more powdered sugar
*If the frosting is too thick, add more milk
For Piping
1. Fill a piping bag with the frosting and cut a small cut at the end (or use a piping tip)
2. Pipe onto cupcakes with your own design
3. Enjoy!
