Healthy Brownies
Serving Size: 16 brownies
Ingredients
2 tbsp instant coffee powder
2 tsp of vanilla extract
1/2 cup of all-purpose flour
1/2 cup of unsweetened cocoa powder
1/4 tsp baking powder
1 cup of sugar or zero-cal sweetener *recommended: stevia or truvia
1/4 cup of vegetable or olive oil
3 large egg whites
Directions
1. Preheat oven to 350 degrees
2. Line 8-inch square baking pan with foil; spray foil with olive oil cooking spray
3. In a cup, dissolve coffee in the vanilla extract
4. In a bowl, combine flour, cocoa, baking powder, and salt
5. In another bowl, whisk sugar, vegetable spread, egg whites, and coffee mixture
6. Add dry ingredients to wet ingredients; mix together
7. Spread evenly on pan
8. Bake for 20-24 mins (check with toothpick; make sure it comes out mostly clean)
9. Cut brownies into preferred size
